Two Ingredient Bean and Queso Dip Pan Fried Burritos
I saw a burrito fried on a large grill in a movie once. Both sides looked crisp and delicious with the toppings spilling everywhere, oozing with sour cream and all the usual burrito ingredients. When I started craving pan fried burritos, I didn’t have any meat to grind (I was really into grinding my own meat when I first published this blog post) so in an effort to satisfy the source of the craving, the crunch of the tortilla, I made two ingredient bean and queso dip pan fried burritos. They were so warm and satisfying. Good enough to make two nights in a row. 🙂 I have grown to love refried beans ever since my last Hunger Strike and even the most simple burritos like this one are good enough to be one of our frequently used dinner recipes.
While this is a go to dinner recipe, it’s also a pretty awesome thing to make during halftime or before the game if your team is playing in the afternoon.
Once in awhile I’ll be in the mood for a fully loaded burrito with ground beef, rice, beans and cheese but since I have a good spot by my house for huge burritos I don’t often make them at home. Tomatillo salsa is a must when I have homemade fully loaded burritos. 🙂

- 4 burrito sized flour tortillas
- your favorite queso dip
- one 12 oz. can of refried beans
- oil for the pan
- sour cream
- In a small pot, heat your refried beans on medium heat until warm all the way through.
- Preheat a medium sized pan on medium heat.
- Drizzle a little oil to lightly coat the bottom of the pan.
- Cook burritos one (or two at a time if there's room) until crisp and brown on both sides.
- Top with sour cream, salsa and cilantro.
