As you know, I’ve been working with Sun Basket for awhile now. You might have seen my review from way back when I first started using their healthy meal kit delivery service. Now they have a Lean & Clean Menu, which is what I am talking about today.
For just over one year my daughter and I have had some very positive changes in our life that have brought some challenges our way. Working on my body and overall health has been a great mental, physical and emotional challenge. Every single day I do everything I can to improve myself from the day before and one of the things my daughter and I have changed for the better is our eating habits. We eat more whole foods and prepare more clean recipes than ever before. The difference is very noticeable in our energy levels and in my appearance.
I have lost over 30 pounds and become stronger than I ever thought I could be.
Our days are very busy filled with work, school, after school activities, sports and somewhat of a social life. Keeping up with the grocery shopping and menu planning is such a challenge. Takeout is delicious and it has it’s place on a splurge day but we benefit more from fresh, whole foods.
New recipes from a fresh perspective keep things from getting too mundane. I usually find a few good recipes and use them often. My poor daughter tires of the same ole thing and while I don’t realize it, I tend to veer off course from healthier eating habits without conscious admission that the same thing week after week gets super boring.
Sun Basket has really helped us keep that “spark” in our better eating habits. And we’ve learned to appreciate treat days even more because it’s not as frequent.
This recipe has polenta. One of our favorites! The vegetables are such a simple idea but I hardly ever think to buy these ingredients and sauce them together for a summer vegetable side.

BBQ meatloaf is #2 on my favorites list. It’s like eating a giant meatball! I love meatloaf and this one was delicious. I’d order this one again.
The pork was great in this recipe but the peach tomato salad really impressed me. I made this one again after trying it in my Sun Basket box.
Seared steak with haricot verts, cherry tomatoes and scallion oil. I am a total sucker for steak.
Salmon and summer squash in parchment is kinda fun because everything is cooked in parchment, keeping the mess contained. And I do love salmon.
