Snack Ideas: Homemade Potato Chips & Guacamole
Once Monday is staring me right in the eyeballs, I hit the ground running. There is a lot of work to be done, kids to chase after, moments to savor and all the daily chores are waiting patiently for some attention. I work up an appetite and I don’t always take the time to prepare snacks ahead of time for packing in lunches or for my own lunch. I thought maybe you could use some snack ideas to get ready for the week so here are two of my favorite things: baked homemade potato chips and an easy guacamole.
My brother inspired this guacamole-slash-avocado-dip. Let’s not get too caught up on the name because that really doesn’t matter. The most important thing is how dee-licious it is. I’ve seen some different variations for guacamole (or avocado dip), some of which involve flavor packets, kitchen gadgets or a long list of ingredients. There is absolutely nothing wrong with any of those other recipes. Just like any other recipe, there are countless ways to make them. This one might be different because you only need a few ingredients, a container to store it in and a fork to mash everything together after the avocado and tomato are cut into pieces. My brother Daniel came up with this and I just changed a thing or two and put this recipe into words but I give him full credit. He’s better at finding ripe avocados than I am so when I see him a’comin’ with avocados in hand, I start cheering! My “YAY!” can be heard a block away. I should really keep it quiet before the neighbors catch on and start elbowing their way into my share of this dip. I can’t let that happen.
As for these homemade potato chips, I always make multiple batches. Unfortunately my oven only came with two racks so I can only bake two sheets at a time. 🙂 I really like having full control over the salt and other flavors I add to my chips. One of my favorite things to toss with the potato slices is fresh rosemary. Have you ever baked your own potato chips? I favor baking instead of frying to avoid the huge mess on my stove and countertop.
These are just a couple snack ideas that I’ll be munching on this week. If I can hide enough of these chips I’ll put some in my sandwich tomorrow for a really fun crunch and added flavor. I love putting chips in my sandwiches!
