Salmon and Summer Squash in Parchment
It’s been over a year since I started using Sun Basket’s healthy meal kit deliver service. Taylor (my daughter) and I have really enjoyed our meal kits, the recipes and new recipes to try. Taylor is in her early teens now but she’s been cooking ever since she was very young. I’m so grateful she’s able to cook these recipes on her own, making dinner super easy for me!
She’d never made fish in parchment before and even though I’ve been making farro salad for a few years, she prefers this recipe more. Go figure. 🙂
The summer squash (zucchini) is sliced and cooked in the parchment with the salmon and she made the salad while the fish was cooking. I think this is helping her prioritize tasks in the kitchen because she’s pretty efficient when she cooks these recipes.
We’ve had some awesome inspiration from our boxes and I look forward to the menu when we order.
