Rosemary Pork Chops with Cardamom Peaches
What is your favorite fresh herb to use? Last winter my dad gave me a beautiful rosemary “tree”. I loved it! Everything I made had rosemary in it until the poor thing up and died right there in its pot. Such a freezing time of year I didn’t want to plant it outside and my potting soil was frozen stiff so I tried to save it with no luck.
This spring I purchased a small rosemary plant and apparently it liked what I have to offer. I have cooked and baked with rosemary and even fried trout with it!
Did you know that rosemary is good fried? Cut small sections of a branch and fry under a slice of fish, pork or your favorite thing to pan fry. Bite into the warm, crisp herb and enjoy the depth of its flavor! MMM!
In my opinion, rosemary and cardamom get along quite well.

Two summers ago my obsession was fresh basil. I still have some, but it’s not my season favorite. I tend to focus on one, use it a LOT and then move on. When it comes to using that herb or spice in the future I tend to have a more well rounded knowledge of the flavor and possible combinations so I can try new things and have a higher success rate.
