Quinoa Black Bean Salad
I love green salads but this Quinoa Black Bean Salad is a nice break from spinach and kale salads at my house. This recipe is from Kim over at Liv Life and this salad has been a family favorite ever since the first day that we tried it.
I’m a big fan of contrast. The texture of the quinoa, black beans and the corn are really pleasing contrasts and the flavor makes healthy eating enjoyable.
I like to make salads ahead of time so my lunch is ready and I don’t grab something to eat that I shouldn’t. 😉 No skipping lunch for me and no raging hunger right before dinner! One of my biggest downfalls used to be skipping breakfast and lunch, which usually did not end well for the day. I ended up eating more than if I would have just eaten a few things during the day. I like to make salads and sandwiches ahead of time so they are easy to grab if I am in a hurry or if hunger suddenly takes over. What is your favorite thing to have for lunch?
