Pork Tacos Verde Style & A Case of the Mondays
Talk about a case of the Mondays!
What a day.
Ever since Tay started school, Wednesdays have been half days for her with late start for Ethan once he started Jr. High. This year it changed to one hour late start on Mondays for both of them and I am completely thrown off. You would think sleeping in for an hour would be a good thing!
Right before we left for school Tay and I had a parent child discussion that ended in some frustration and we left in a huff. Got in the car, drove three houses down and I felt the car leaning heavily to the left. Right at that moment I remembered that the front left tire was completely flat so…when I began to turn around in the street I heard that grinding noise that is worse (and far more expensive) than fingernails on a blackboard.
I didn’t cream, cry or say any bad words. Good thing too because Tay was clearly stressed by the look on her little face. Remember we left in a huff.
And we were nearly late. (sigh)
Back to the house I went to get the truck , taking my offspring with me kicking and screaming. Had she given me the chance I would have explained that she cannot guard the car to make sure no one steals it for multiple reasons and she had to get to school. In the truck we went with my other half coming outside to change the flat tire. And thank goodness for his working brain because I could only think of having it towed (three houses away) or just driving the blasted thing in reverse until it was in front of our house.
Scurrying into school right on time, Tay and I had the chance to give kissy poohs and put things back into perspective. I wished her well for the day and even had time to give her some words of encouragement for something she had on her mind.
Back at home, I came back just in time to lower the car and haul the big huge jack back into the garage. That thing had metal wheels that weren’t very efficient but great for exercise! Dragging that jack around could totally be part of a Crossfit WOD. How fast can you pull that 5 rounds for time??
Speaking of exercise, I could see my trip to the gym flitting away like a butterfly without a care in the world. The extra junk in my metaphorical truck was laughing at me. I just know it was.
To and from the tire store, back at home much later and time to bust a move. So much work to do and less time, but it could have been much worse. Thankfully it didn’t start to rain until we were back home for the day. One thing after another kept going wrong. One snag after another after another. At the end of the day, my to do list looks untouched and mad at me. I’ll just have to cross out Monday and write in Tuesday since that’s about all I can do.
I hate to sound all mushy, but I’m super grateful to have work even if I’m way behind already. Oh, and that huge pile of dirty dishes in the kitchen? I’m pretty grateful that we have food to dirty those dishes with. The clean laundry staring at me from across the room is all thanks to having clothes that are the right size, warm and not worn out. I can feel the dirt on the floor, the light is in my eyes and my smelly dogs are right here putting their annoyingly wet noses on me. But I’m glad for them.
I had an evening with my wee one and we talked and shared comfortable silence. It was great!
Yeah, some things about today sucked. But overall, it really kicked ass.
Leftover Pork Dinner Recipe
Grateful or not, the reality is that things take time and time is something that I don’t really have on days like this. Thankfully we had some smoked pork sliced and ready and it was going to be pork tacos, verde style. It’s so simple you don’t need a recipe but I’ll add one anyway to save you from asking. Not that I mind questions. I actually welcome them.
Leftover Pork Soft Tacos, Verde Style
From now on I’ll only smoke meat in 20 pound batches. I just loooove how much meat is left over for freezing and endless crock pot meals or slice-and-serve meals. Less crying and more of everything else! This could easily be added into a slow cooker, in fact I have a pork enchilada recipe from a friend that I’d like to share with you at some point. Today just wasn’t the day though. But this was very worthwhile and I adore the verde sauce. It’s my absolute favorite!
- soft flour tortillas
- sliced pork, cooked or smoked
- shredded cheese
- diced tomatoes
- verde sauce, 1-2 cans depending on your personal preference
- plain Greek yogurt to substitute sour cream
- Lay your tortilla on a plate and place sliced pork in a line on your tortilla. Top with shredded cheese, tomato and verde sauce. Heat in your microwave until just heated through, about 30 seconds. Top with Greek yogurt.

Oh and my dogs got into the garbage. They had torn up a piece of Tay’s scratch paper from her math homework that didn’t get attached to her page from Thursday night last week. She saw that and slowly drew her breath in with wide eyed wonder.
“They do eat homework!” she gasped! It was as if she had caught Santa Claus himself in the act of putting presents under the tree. I wish I could have taken a picture of her sweet face.
I explained that they didn’t eat her homework but there was probably a food they liked attached to it. If they had actually eaten it, we wouldn’t know quite yet. That is totally Taylor’s quote of the day!
After giving some detailed cleaning attention to the floor, I found they had smeared something all over the floor. I have yet to find a reason to be grateful for that! Any ideas?
