Quick & Easy Penne Pasta with Sweet Italian Sausage

The first month of the year is already coming to a close and my other half and I have not had a quiet dinner at home together in what feels like ages. The holidays, catching up on work and other projects and sickness find us looking at each other with confused expressions. Where has the time gone? (I need something easy like this Penne Pasta with Sweet Italian Sausage to pause over and reflect.)

Already making plans for summer, I need to slow things down a bit. Even if it’s just for one night.

With my work I find myself squeezing in a few things in the evenings and again late at night. Before I know it, it’s way past bedtime and I scurry off to get a few hours of sleep. I need a break and I want to take time to relax and enjoy myself.

This pasta was a last minute decision. Well, last minute as in that same morning. I fully intended to pick up a ready-to-bake pizza with my favorite little sausage balls because dinner was not planned and I was in a hurry to figure something out.

I make this for dinner when I need a little Italian sausage and pasta in my life. It just happens to be easy, but that’s not why I make it regularly. The sausage has a gentle savory flavor that adds a flavor to the outside of the pasta. The tomatoes are perfect for adding flavor, color and a different texture. I like to use the penne with ridges. Those little lines make little channels for juices from tomatoes and sausage. MM-MM-MM! Sweet onions and the spices are so perfect.

Crock Pot or Stove Top

I love this pasta dinner because it is absent of heavy sauces, which I love, but I do enjoy a break from them once in awhile. I’ve been known to cook the sausages on the stove in a skillet if I don’t plan a few hours ahead, but the crock pot option is great for when you can’t spare any time to watch the sausages on the stove top.

This batch will make a delicious date night meal with leftovers for lunch the next day.

This is a very popular weeknight recipe at our house. Double the batch and have enough for two meals! Once the sausages are in the slow cooker, the only thing left to do is cook the pasta. Great for potlucks and family get togethers, this pasta dish is easy and delicious.
Recipe type: Main Dish, Dinner, Crock Pot
Serves: 4-6

  • one package of 5 sweet Italian sausages (or brats)
  • 1 medium sized onion, diced
  • 1 cup of beef broth
  • one 16 oz. package of penne pasta cooked and drained
  • one 15 oz. can of diced tomatoes
  • olive oil
  • 2 tbsp. dried Italian seasoning

  1. In your crock pot add sausages, broth and onion.
  2. Set to high and cook for 4 hours.
  3. Slice sausages and place in a large serving bowl.
  4. Stir in cooked and drained penne.
  5. Then mix in can of diced tomatoes, including the juices.
  6. Add Italian seasoning.
  7. Drizzle 2 tbsp. olive oil over ingredients and fold together.
  8. Enjoy!

    When you make this via stove top, how do you do so?

      Kat, you can add the brats, broth and onions to a pot and let it cook away until the brats are done, boiling the brats in the broth. You can also cook the brats in a frying pan and saute the chopped onions at the same time, using broth to deglaze. :)
