This orange quinoa salad is on the sweeter side and is best served for brunch or as a side dish for your evening meal. Most evenings I crave something sweet after dinner. Serving this after the main course is a healthier alternative than dessert and it’s better for us too. :) This has become a family favorite!

Orange Quinoa Salad
This Orange Quinoa Salad is on the sweet side and perfect for brunch or a side dish for dinner.
Recipe type: salad, healthy side dish, vegetarian

  • Dressing Ingredients:
  • ¼ cup fresh squeezed orange juice
  • 2 tbsp. olive oil
  • 1½ tbsp. nonfat greek yogurt
  • 2 tsp. honey
  • ½ tsp. salt
  • ⅛ tsp. fresh ground black pepper
  • Salad:
  • 1½ cup uncooked quinoa
  • 1 cup thin sliced green onion
  • 1 cup of dried cranberries
  • ⅓ cup of finely chopped fresh parsley
  • 3 tbsp. chopped almonds

  1. Combine all of the dressing ingredients in a bowl and whisk together until well blended.
  2. Be sure to rinse your quinoa, season your water and cook following the directions on the package for the quinoa. Usually 1½c. quinoa will need 3 cups of water.
  3. Add green onions, cranberries and parsley to a salad bowl.
  4. After quinoa has finished cooking and has been drained, allow it to cool before completing the salad.
  5. Then add quinoa to the rest of your salad and mix well. Add the dressing and stir until salad is evenly coated.
  6. Sprinkle almonds on top and you are ready to enjoy your quinoa salad!
