Snacking on Mexican Chocolate Popcorn & Skinny Girl Popcorn
Last year I started packing popcorn for Tay in her lunch and popping some for me to snack on during the day. No fun flavors like the Skinny Girl popcorn, I made plain ole popcorn without even a faint drizzle of butter. Poor Tay. I didn’t mind eating it plain but she wasn’t very pleased. You should have seen her eyes light up when I brought home Skinny Girl lime and butter popcorn flavors! Curious about the lime, I popped a bag right away. Tay tried it without hesitation but she didn’t care for it. I really liked it and I’ve been making a bag for my mid day snack, sometimes known as “lunch”, and I like the light and crisp flavor of lime with a hint of salt. Since I’m not a big fan of the buttery popcorn, it’s perfect for me. Tay prefers the butter popcorn and she will eat an entire bag if I let her. So I used the butter & sea salt popcorn to make this Mexican Chocolate Popcorn.
My other half snacks on the lime popcorn with me and he’s been enjoying it at work too. He gave his stamp of approval on the Mexican Chocolate Popcorn and I’m pretty sure I saw him sneak some right after I finished taking these photos to show you. 🙂
I forget to sit down and have meals during the day but it’s very important that I eat enough during the day, especially on days I go to circuit class. I’ve also been staying aware of what I eat and the ingredients, not just the nutrition facts. I’m impressed that Skinny Girl popcorn can give us good, flavored popcorn without a lot of calories. No artificial flavors, no artificial colors, no artificial sweeteners and no high fructose corn syrup. Their popcorn flavors are not heavy with flavor or sweetness, making the popcorn a lightly flavored snack with lower calories but still way more fun than my old plain popcorn routine.
When I saw these Skinny Girl popcorns at Walmart, I thought there would be small bags of already popped goodies inside the box but I was very happy when I saw the microwave popcorn bags. That means a lot more snacks for us! Yay!
I have a sweet tooth that acts up mostly in the afternoon and late evening. This Mexican Chocolate Popcorn has no added sugar and only uses three ingredients including the popcorn. Not bad, right? Just a little cinnamon, some unsweetened dark chocolate and a bag of butter and sea salt Skinny Girl popcorn. The small amount of chocolate gives it a rich flavor that lightly coats the outside of the popcorn and the cinnamon adds a pleasant, subtle flavor.
This takes very little time to put together and is so easy to make, which is probably why I keep running out of popcorn. You’ll want to chop the chocolate and measure the cinnamon ahead of time so you can move quickly while the popcorn is hot. I recommend dividing the chocolate into two parts, making it faster to mix into the popcorn.
Right after the popcorn is popped, I remove it from the microwave and let it sit just for about a minute then I carefully pour half of it into the paper bag, quickly followed by half the chocolate and cinnamon. I add the rest of the popcorn, then the remaining chocolate and cinnamon. Close the top of the paper bag and mix until the popcorn is coated in the chocolate and cinnamon.
I lay the popcorn on a sheet of parchment to cool, spreading it out a bit so it doesn’t stick together. I might grab a few pieces to snack on. You know, to taste it and make sure it’s good. 😉
I’ve been making this snack for me, my other half, Tay and giving away to friends so they can try it too. The popcorn on its own has been ideal for popping and taking on the go, especially on days that we are at the barn and I really like the size of the bags. Smaller than the average bag of microwave popcorn but still big enough to supply a snack for at least 2 people, this is extremely convenient. Which flavor would you like to try?
- 1 bag of butter and sea salt Skinny Girl popcorn
- 1.25 oz. unsweetened dark chocolate
- ¼ tsp. ground cinnamon
- 1 lunch size brown paper bag
- Roughly chop your chocolate, I like to make sure that most of the pieces are small with some larger chunks mixed in. The larger ones will slightly melt and adhere to the popcorn.
- Divide chocolate into two equal parts.
- Place popcorn bag in the microwave and pop according to instructions.
- After popping has stopped, let popcorn bag rest for 30-60 seconds, then open bag carefully away from you. Be careful. The contents will be hot.
- Pour half of the popcorn into the brown bag, immediately followed by half of the chocolate and half of the cinnamon.
- Now add remaining popcorn, chocolate and cinnamon.
- Close the brown bag and shake to thoroughly coat the popcorn with the chocolate and the cinnamon.
- Spread out popcorn over parchment to completely cool.
