Kale Blueberry Smoothie
When it comes to kale, most people either love it or hate it. I like most varieties, depending on how I plan to consume them. Most varieties are good roasted with a little olive oil, salt and pepper. The baby kale leaves are great in a salad and I love it in smoothies. This kale blueberry smoothie is a little something I make for myself and my other half when we get up in the morning together. He is definitely not a fan of kale but in his words, “I can’t even tell it’s in there.”

I am so excited that spring seems to be here. At least where I am. I can’t wait to get my kale growing so that I have plenty of ammo for our breakfast smoothies! I have been told that this smoothie is far from pleasant to look at. That may be true. Let’s not get caught up in appearances though, shall we? 🙂

If you are anything like me and you want to find a way to eat more greens, consider drinking them. At least once in awhile.
- 1 large handful of raw kale
- ½ cup frozen blueberries
- 1 banana
- 1 tsp. chia seeds
- 1 scoop of protein powder
- Add ingredients to blender pitcher.
- Add about 1 cup of water or enough water to reach the half-way point of the ingredients.
- Blend for about 10 seconds or until completely liquified.
- Drink and enjoy!
