Irish Coffee Cake with Whiskey Sauce
In my quest to find something Irish to make for dessert on our Irish Food Day, I came across this recipe and thought it would just be to die for!
This cake turned out soft, but not all that moist. Not a problem, that’s what the sauce is for. 😉 Easily adaptable if you or someone you will be dining with one who does not prefer whiskey you can substitute it for Cognac (like I did) or just use coffee. 😀
I used espresso shots because the shots are so much richer than my drip coffee and you know how I loooooove my coffee! I actually doubled the coffee and the Cognac for this recipe and the sauce was sweet, rich and delicious.
Like a perfect little sponge, the cake soaked up the sauce like a champ! And quite honestly, so did I.
