Inspired by Carrot Cake Smoothie
Yes, this carrot cake smoothie is inspired by the real thing. Minus the raisins that come in a classic carrot cake. It’s a good-for-you version and a great way to get a couple more servings of the ‘ole fruits and veg.
I never liked carrot cake at all when I was growing up. Until about 12 years ago, I hate it. The raisins were a turn off and back then I was not a fan of nuts in anything. Especially cake. I’ve since changed my mind.
My favorite carrot cake recipe has no raisins or nuts but this smoothie, at least when I make it, has walnuts blended in.
Sure I could peel a carrot, slice an apple and snack on the walnuts while eating yogurt on the side but that’s not portable. A smoothie is. And I like sipping on this cinnamon flavored smoothie while I’m sitting at my desk working or driving around running errands.
A fan of carrot cake or not, this carrot cake smoothie is worth a try!
- 1 small apple sliced and cored
- ½ cup shredded carrot half of a large one
- ¼-1/2 tsp cinnamon cinnamon lovers use ½ tsp
- 1 pinch nutmeg
- ½ cup non fat Greek yogurt
- 4 oz water
- ¼ cup walnuts
- Put all the ingredients in your blender and blend!
