Hummus Lettuce Wraps
At the time I am writing this to you, summer has just begun (actually it hasn’t technically started yet). The sun shines most days but school hasn’t finished yet for summer break. The longer days lead me to believe it truly is summer but I need to remind myself meals still need to happen on school year schedule. At least for a few more weeks.
Hummus lettuce wraps are one of those things you can put together super quick with whatever you have on hand. At the grocery store shopping for dinner? No problem! Just pick up a few things and you’re set. Make this your unofficial meal. 🙂 This will hold everyone over until dinner is ready.
I don’t usually make anything fancy to out atop hummus lettuce wraps. The caramelized onions and eggplant was from the previous day, easy to scoop a little over the hummus. For something fast if nothing is waiting to be eaten in the fridge, grab a jar of roasted red peppers and pine nuts. That’s the favorite of our family and friends!
What makes the Unofficial Meal so great?

To me, it’s sort of like a spur of the moment get together with whomever is around. Your kids, your spouse, your roommate, friends…it doesn’t have to be fancy. It can be as simple as hummus, lettuce and a little something you feel like adding. Mixed with the people around you, the unnoficial meal can turn into something worth remembering!
