Devil’s Food Cake Cookies for #ChristmasWeek

I don’t have a fond memory to share with these cookies, but I can offer you a glass of cold milk. You’ll just have to decide what kind of milk you would like to go with these light and fluffy Devil’s Food Cake Cookies.

Fluffy like cake but in the shape of a cookie, these are rich and chocolately but most importantly they are extremely simple to make. Yes, this recipe uses a box of cake mix. I had to specifically go out and buy a box of devil’s food cake mix. It’s been ages since I bought a box of cake mix! I saw a few really neat looking ones that I wanted to play with but I was on a mission. Time to make devil’s food!

Tay has been asking for devil’s food cookies since school started back up. Actually she’s been asking to help make them but she’s been a bit behind on her to do list this week. (sigh) I’m surprised my voice hasn’t gone out with how many times I’ve asked her to do what’s on her daily list. Have you taken your dirty clothes out of the bathroom? I’m adding 10 minutes to your computer math time because I saw you bypass that last question…    >: (

So I made these cookies by myself. By choice. And I swear if I have to keep watching to make sure that she is even a little bit on track I am going to bury my head in this cookie dough and leave it there for a good long while.

Some days my patience wears thinner than a single layer of puff pastry. Other days you couldn’t penetrate it with a jackhammer. :)

    These cookies are soft and fluffy like cake, but in the shape of a cookie! Rich and moist, devil’s food cake cookies are the perfect holiday treat that you can enjoy all year round!
    Recipe type: cookies, dessert
    Serves: 12

    • 1 box of devil’s food cake mix
    • ⅓ cup of melted coconut oil
    • 2 eggs at room temp
    • 1 packet or 1½ tsp. of instant coffee

    1. Preheat oven to 350 degrees and line cookie sheets with parchment paper.
    2. In a large mixing bowl dump the entire box of cake mix.
    3. Add coconut oil, instant coffee and mix.
    4. Next add eggs one at a time and mix after each egg until just incorporated.
    5. Scoop by spoonfuls, rolling each spoonful into a ball. Place onto cookie sheet and slightly flatten with your hand.
    6. Bake for 9 minutes, cookies will not be shiny and will be soft to the touch.
    7. Allow to cool on the baking sheet for 10 minutes before transferring to a cooling rack.
