BBQ Meatloaf with Roasted Potatoes and Green Beans (recipe link below)
This recipe from my most recent Sun Basket box stood out to me because it reminded me of my first meatloaf I ever tasted as a child. This meatloaf was juicy and flavored with cooked shallots, spices with BBQ sauce spread on top. It reminded me of a giant meatball! Oh it was so good I just had to share this one with you.
The meatloaf from my childhood was not as pleasant. But I decided to add this recipe to my Sun Basket box because looking at the ingredients, it looked good to me. Maybe I’ve matured and can enjoy something like meatloaf now or maybe the friend of the family that made that first meatloaf didn’t have a very good recipe.
This one is good. I’ll be using this again. I must admit, this recipe makes 4 servings but I totally divided this in half because I forgot to read that part of the recipe! Oops. No regrets though.
