15 Minute Meatballs
It’s amazing what I can make time for when motivated. Can you relate?
If I had a shot of tequila for every time someone in my family (including myself) wanted meatballs for dinner I’d be drunk right now. Like, let-me-sleep-this-off drunk.
When I started making this quick version of small batch meatballs Tay and I wanted them so bad I started making them this way once or twice a week. Thanks to the humongous amount of beef in the freezer, that was convenient. One night we just ate them like an appetizer but instead of fancy toothpicks we used our fingers.
Small so they’d cook fast which was a must. It was barn night when I made these for the first time. No fancy seasonings or fillers, just beef and garlic salt. A little browning, a little oven time to finish them and dinner was basically done! I made an open faced meatball sandwich the first couple times and then moved on to spaghetti with meatballs.
Beer and mushrooms would make a good sauce for these cuties so remind me to give that a try and share what happens with you.
This satisfies our meatball cravings and it’s super quick to make so it’s pretty much done in between the time we get home from the barn and when we are ready eat. It works well for us.

Two tips for keeping the cooking time at 15 minutes:
- Make them small.
- Preheat your pan on medium high to brown two sides quickly before baking.
- 1 pound ground beef
- garlic salt
- Preheat pan for meatballs on medium high.
- Preheat oven 400.
- Form meatballs.
- Oil the pan.
- Start cooking meatballs in the pan for 3 minutes.
- Sprinkle with garlic salt.
- Turn balls.
- Cook for another 3 minutes.
- Bake at 400 degrees for 5 mins.
